Lemon Bars

This is another favorite recipe from the grammar school fund raiser cookbook that I submitted. It’s from the 1980’s and someone else submitted a similar recipe for these. It’s very similar, just some of the quantities are a little different.

Crust:
3/4 cup butter
1/3 cup powdered sugar
1 1/2 cups flour

1 – Mix the ingredients togther. It will resemble pie dough.
2 – Pat the dough into a 9 x 12 x 2 inch pan.
3 – Bake for 20 minutes at 350 degrees.

Topping:
3 eggs
1 1/2 cups white sugar
3 tablespoons flour
1/3 cup lemon juice
1 teaspoon grated lemon rind

1 – Beat eggs until they are lemon colored.
2 – Mix the other ingredients with the eggs until well blended.
3 – Pour over the baked crust from earlier.
4 – Back for 25 minutes at 350 degrees.

Finish up:
1 – Let it cool, then sprinkle with powdered sugar.
2 – Cut into bars.

Depending upon how you cut them, you will get 16 bars, more or less. Enjoy!
