Zucchini Bread

So good, you’ll swear you died and went to heaven!

A very dear coworker of mine named Violet baked like an angel and would bring her confections to work for her coworkers and not just on our goody days.

Ingredients:
3 beaten eggs
2 cups sugar
1 cup oil
2 ¼  cups flour
2 tsp Cardamom
½ tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp vanilla
2 cups unpeeled, grated, raw zucchini
1 cup chopped walnuts

Mix It:
Mix together eggs, sugar, and oil.  Add flour and spices a little at a time, mixing well after each addition.  Mix in vanilla, zucchini, and chopped walnuts.

Pour It, Bake It:
Pour into 2 greased loaf pans, and bake for 70 minutes or until done at 350 degrees.

The bread is good warm with butter on it or plain and cool.
Get it while you can because it will disappear fast!  And, Hey, it’s a vegetable, sort of.
