Ingredients:
1 lb. bulk Italian sausage
1 medium onion, sliced
1 ½ cups water
2 tbl chopped fresh parsley or 1 tsp dried parsley
2 medium zucchini, cut into ¼ inch slices
1 16 oz. can whole tomatoes, undrained
1 16 oz. can garbanzo beans, drained
1 10 ½ oz. can condensed beef broth
Cook it:
Cook sausage and onion over medium-high heat in 3 qt sauce pan 8 to 10 minutes, stirring occasionally, until sausage in no longer pink. Drain.
Stir it:
Stir in remaining ingredients, breaking up tomatoes.
Heat it:
Heat to boiling; reduce heat to low. Cover and simmer about 10 minutes or until zucchini is tender.
Sprinkle it:
Sprinkle with Parmesan cheese if you want.
Yield: 8 servings
*”Shut up and eat”. It sounds more polite in Italian!
